Whole Grain cooking!

Hi everyone! I have been laying low this past week with the holidays and the kid being out of school. I have come upon the name of Lorna Sass, who has a few cookbooks out in regards to eating Whole Grains. I found one of them, at least partially ONLINE, for free (never got to the end), with many really fantastic sounding recipes, HERE! Her book is called Whole Grains for Busy People.

The way I came upon finding her, is that I had found a good looking recipe I will be making tomorrow, for both my house, and my friend, who brought us a 9 x 13 of the best mac n cheese for Christmas!!! I wanted to fill her 9 x 13 with something wonderful to take back to her! My Organic Gardening magazine had a recipe for a black bean casserole that just happened to be written by this gal, Lorna Sass!

I bought a tiny container of sour cream for each house, too, to go along with it for a garnish! Some guacamole would be the perfect touch as well...and a few Margaritas!

    I hope it was a really wonderfully happy Christmas and holidays for you.
    Soooooo how WAS the casserole? Do tell. The recipe does sound very good with the corn, beans and the tomatoes and yum....I wonder how much heat was in it with the cheese. I hope you took pics. That was a really nice way to return your friend's dish to her.
